A dense textured 'brick bread' based on a Danish recipe which is typically made with rye and wholewheat flour with rye grain and seeds.
This is a slowly fermented sourdough dense and textured bread based on a Danish recipe which is typically made with rye and wholewheat flour with grain and seeds. These are soaked in ale overnight to achieve rich and malty notes which complement the natural richness of the roasted seeds, whilst the buttermilk and molasses round off all of the complex flavours.
Tips:
- Store wrapped in a kitchen towel with the opening facing down
- Slice thin (5 mm) and enjoy as an open sandwich or to accompany any meal.
- Freeze in slices.
- Bake the thin slices in a pre-heated oven for 15-20 minutes and you will have delicious crispy thins.
